All of our fish is line caught off the coasts of Kauai by local fisherman.  Our colleagues gill and gut all the fish immediately after being caught to preserve freshness.  We also brine the fish in deep ocean seawater for 24hrs.  This process gives you some of the best seafood you will ever have the pleasure of serving.  ​
